PS5 caps at 120 so is a 165Hz panel wasted on me

Most of my gaming is on the PS5 which tops out at 120fps, so I'm trying to figure out if paying for 165Hz or more does literally anything for me. And do I specifically need HDMI 2.1 to get 120Hz at 1440p, or will a 2.0 port do it. Half the cheap monitors only list 2.0 and I don't want to find out...
